Beef & Broccoli. This American Chinese dish is quick to make and full of healthy vegetables. Beef is a good source of Protein and Iron, and broccoli is a good source of Vitamin C.
Ingredients:
3/4 lb lean beef
1 1/4 cup oil
2 cups of broccoli
Marinade:
1 tablespoon rice vinegar
1 teaspoon sugar
1 teaspoon soy sauce
1 tablespoon water
1 tablespoon cornstarch
Sauce:
2 tablespoon oyster sauce
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon water
Thickener:
1 teaspoon cornstarch mixed with 1 tablespoon water
1 lb fresh broccoli
2 garlic cloves
Broccoli:
1/2 cup water
1/4 teaspoon salt
1/2 teaspoon sugar
2 cups of broccoli
Preparation:
1. Cut the beef across the grain into this slices.
2. Add marinade ingredients, adding the cornstarch last (Marinate for thirty minutes)
3. Prepare the sauce by mixing together the oyster sauce, light soy, dark soy, and water in a small bowl.
4. In another small bowl mix the cornstarch and water thickener and set aside.
5. Wash and drain broccoli. Cut the stalk into small slices.
6. Cut the flowerets into 3-4 pieces.
7. Crush the garlic.
8. Heat the wok and add 1 cup of oil.
9. Add beef and let it lay for 30-40 seconds and then stir to separate the pieces.
10. Remove beef when it begins to change color and drain on paper towels.
11. Clean the wok with paper towels.
12. Add 2 tablespoons oil to wok and add crushed garlic.
13. Add the broccoli, sprinkle with salt and sugar, and fry briefly turning down the heat if necessary to prevent burning.
14. Add 1/2 cup water and cook broccoli covered 4 to 5 minutes until it turns a bright green and is tender but crisp. Remove from wok and drain.
15. Clean out the wok and add 2 tablespoons oil.
16. Add the broccoli and the beef.
17. Add the sauce and cornstarch mixture in the middle of the wok and stir quickly to thicken.
18. Mix everything together.
Serve hot over steamed rice.
