Cranberry Cornish Hens Featured

Ingredients:

1can whole cranberry sauce
1 tablespoon orange juice
1 teaspoon sugar
1/2 teaspoon grated orange peel
3 tablespoons butter
1/4 cup hot water
2 teaspoons raisins
1/4 teaspoon salt
1/8 teaspoon cinnamon
Dash pepper
2 Cornish hens (1-1 1/2 lbs. each)
1 tablespoon butter
1 teaspoon bouquet sauce
1 1/2 cups plain bread cubes
wax paper


Preparation:
1. Combine cranberry sauce, orange juice, sugar, and orange peel in a small bowl.
2. Microwave on High 2 minutes or until heated. Set aside.
3. In medium bowl, melt 3 tablespoons butter High 1 minute. 
4. Stir in water, bread cubes, raisins, salt, cinnamon, pepper and 1.4 of the cranberry sauce. Stuff hens with mixture.
5. Place hens breast side down on plate. 
6. Melt 1 tablespoon butter in cup on High 15-30 seconds. Stir in bouquet sauce.
7.  Brush hens with half of the mixture.
8. Cover with wax paper. Microwave on High 10 minutes.
9. Rearrange hens and turn over. Brush with remaining bouquet sauce.
10. Recover and microwave on High 4-11 minutes until legs move freely and juices run clear.
11. Reheat remaining cranberry mixture on High 1 minute until hot.

Serve cranberry sauce with hens.
