Ingredients:
3/4 c. apricot preserves
2 tbsp. orange juice
2 Rock Cornish hens, thawed
1/4 c. sliced green onions and tops
2 tbsp. butter
1 c. uncooked mixed wild and white rice
1 tbsp. minced parsley
Chicken broth
Preparation:
1. Mix apricot preserves and orange juice in small bowl.
2. Remove giblets from thawed hens.
3. Place hens breast side down in glass baking dish; microwave 16 minutes on high.
4. Turn hens breast side up for 16 more minutes.
5. Baste hens with apricot mixture every 5 minutes.
6. Saute green onions in butter about 2 minutes.
7. Stir in rice; cook according to package directions, substituting chicken broth for water. Stir parsley into rice.
8. Spoon rice onto serving platter, arrange hens on rice.

Cook Time: 40 minutes
