Cooked Spinach
Ingredients:
I pound of spinach
extra virgin olive oil
3 sliced garlic cloves
salt to taste
Preparation:
1. Cut off thick stems of the spinach and discard. Clean the spinach by filling up your sink with water and soaking the spinach to loosen any sand or dirt.
2. Drain the spinach and then repeat soaking and draining.
3. Heat 2 tablespoons olive oil in a large skillet on medium heat. Add the garlic and saute for about 1 minute, until garlic is just beginning to brown.
4. Add the spinach to the pan. Turn until all spinach is coated. Cover the pan and cook an additional minute.
5. After two minutes of covered cooking the spinach should be completely wilted. Remove from heat. Drain excess moisture. Add a little more olive oil and sprinkle with salt to taste.Serve immediately.
